kcalFresh zucchini stuffed with Italian spiced lentils!
Ingredients
4 zucchinis, halved
1 can 1 lentils, cooked
1 can 1 14 oz diced tomatoes
1 can 1 6 oz tomato paste
1 tbsp 1 olive oil
1/2 onion, finely diced
1 tbsp 1 Italian seasoning
1 tbsp 1 brown sugar
1 tsp 1 cayenne pepper
1 clove 1 garlic, minced
1/2 Tbsp 1/2 onion powder
1/2 Tbsp 1/2 garlic powder
1 tsp 1 cumin
salt + pepper, to taste
Optional toppings: sliced olives, diced red onion, parsley
Preparation
- Heat 1 tablespoon olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the onion and cook, stirring, until softened, about 4 minutes.
- Add the lentils and all spices – cook, stirring, until fragrant about 3 minutes. Add the tomato paste and crushed tomatoes and let simmer about 5 – 7 minutes.
- Meanwhile cut the zucchinis in half and gently spoon out the middle – leaving enough zucchini bottom to hold the pizza mixture.
- Once lentil mixture has been cooked spoon into zucchini boats. You can serve the zucchini raw or (1) pop into the air fryer for 5 mins or (2) pop into an over preheated to 350* F for 12 mins
