Fresh zucchini stuffed with Italian spiced lentils!

Ingredients

  • 4 zucchinis, halved

  • 1 can lentils, cooked

  • 1 can 14 oz diced tomatoes

  • 1 can 6 oz tomato paste

  • 1 tbsp olive oil

  • 1/2 onion, finely diced

  • 1 tbsp Italian seasoning

  • 1 tbsp brown sugar

  • 1 tsp cayenne pepper

  • 1 clove garlic, minced

  • 1/2 Tbsp onion powder

  • 1/2 Tbsp garlic powder

  • 1 tsp cumin

  • salt + pepper, to taste

  • Optional toppings: sliced olives, diced red onion, parsley

Preparation

  • Heat 1 tablespoon olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the onion and cook, stirring, until softened, about 4 minutes.
  • Add the lentils and all spices – cook, stirring, until fragrant about 3 minutes. Add the tomato paste and crushed tomatoes and let simmer about 5 – 7 minutes.
  • Meanwhile cut the zucchinis in half and gently spoon out the middle – leaving enough zucchini bottom to hold the pizza mixture.
  • Once lentil mixture has been cooked spoon into zucchini boats. You can serve the zucchini raw or (1) pop into the air fryer for 5 mins or (2) pop into an over preheated to 350* F for 12 mins
