Zucchini Brownies

kcalA double chocolate brownie, packed with veggies and super moist will be your next go to dessert.
Ingredients
1/2 cup 1/2 coconut oil
1 1/2 cup 1 1/2 coconut sugar
1 tbsp 1 vanilla extract
3 cups 3 oat flour
1/2 cup 1/2 cocoa powder
1 1/2 tsp 1 1/2 salt
3 cups 3 finely shredded zucchini
1 1/4 cups 1 1/4 cacao nibs + handful more for topping
Preparation
- Preheat oven to 350°F and prepare a 9×13 pan with coconut oil.
- In a large bowl combine oil, sugar, and vanilla until fully incorporated.
- Add flour, cocoa, baking soda, and salt. Mix until combined. Batter will be very dry.
- Fold in zucchini by hand. Allow batter to rest for 5 minutes.
- Add in cacao nibs and stir again. The batter should appear wetter. (if not, let it rest for 5 more minutes and stir again)
- Spread brownie mixture into the pan and bake for 25-35 minutes. Brownies are done with an inserted toothpick is removed with crumbs. There should not be wet batter on the toothpick.
Notes
- If you want to use regular flour sub 2 cups of all-purpose flour.
- If you process the zucchini more finely then you won’t see it.
