Easy, delicious vegan queso with no cashews!

Ingredients

  • 2 cups boiled potatoes

  • 2 Tbsp shredded carrots

  • 1 Tbsp Minced Garlic

  • Juice of one lime (optional)

  • 3 Tbsp onion powder

  • 1 tsp cumin

  • 1/4 cup green chiles

  • 1 tsp black pepper

  • 1 Tbsp salt

  • 1 cup coconut milk (add more or less to desired consistency)

  • 1 cup nutritional yeast

Preparation

  • Add all ingredients to food processor and blend until smooth.
  • Serve with chips or with BBQ Nachos recipe.
