Vegan Pancake Sausage on a Stick

If you are contemplating going vegan you may ask yourself how to get started? It can be a lot of Google searching, social media scrolling and hitting up that one friend you know that’s vegan. But hopefully you’ve landed here BEFORE all that and I can help you. Because the best place to start is with vegan breakfast! Like with this vegan pancake sausage on a stick recipe.

Now I’ll be honest. This recipe isn’t the easiest vegan breakfast recipe to get started with. If you’re looking for an easy vegan recipe check out THIS RECIPE. But it is by no means a hard recipe and good one for new vegans to experiment with and begin to learn how different flavors work together to veganize some of your favorites. If you haven’t heard the term veganize yet it simply means to make some of your non-vegan dishes like sausage, queso and other meals vegan!

You “veganize” your favorites by pairing different spices and food together. Another honest moment: it doesn’t always taste like what you’re used to. But the goal when veganizing some of your favorite recipes shouldn’t always be to get it exactly like what you’re used to. Instead it should be to create something tasty that you enjoy eating!

Gather Ingredients

This recipe starts with a basic vegan pancake mixture:

  • Flour
  • Sugar
  • Baking Powder
  • Salt
  • Almond Milk
  • Apple Cider Vinegar
  • Coconut Oil

Then gather the ingredients for the lentil sausage. The great thing about this recipe is you get two breakfast recipes out of it! So be sure to bookmark it because whether you’re craving it as is or want pancakes or looking for a vegan sausage recipe this is it!

  • Dried Brown Lentils
  • Broth
  • Finely Chopped Pecans
  • Ground Flaxseed
  • Maple Syrup
  • Tamari Sauce
  • Fennel Seed
  • Cumin
  • Ground Sage
  • Thyme
  • Cayenne Pepper
  • Black Pepper
  • Salt

Make the lentil sausage

To begin you’ll want to make sure the lentils are cooked. A few tips as you follow the directions on the package. As a new vegan you may not be used to cooking dried beans. But it’s something you’ll quickly adapt to or get canned beans. Whatever works best for you. If you do decide to go the dried beans route be sure to cook them in broth instead of water. This adds more flavor. Additionally, lentils are a great meat substitute and even better source of plant protein. Good news is lentils don’t take long to cook like many other dried bean varieties. So once the lentils have finished cooking it’s time to mix them with the spices and pecans. Add the remaining ingredients to a large mixing bowl and mix well until lentils are evenly coated.

Next preheat oven to 400°. Now using your hands, divide mixture into 12 balls and then shape into oblong “sausages” shaping the patties around the skewers. Then lay sausage skewer onto a parchment lined baking sheet. Repeat until lentil sausage mixture is gone.

Make the vegan pancake sausage on a stick

As lentil sausages are cooking prepare the vegan pancake batter. Simply add all the dry ingredients to a bowl. Whisk. Then mix together the apple cider vinegar with the plant milk, making vegan buttermilk. Now whisk in the vegan buttermilk along with the coconut oil. Set aside.

Once the lentil sausages have finished baking, gently dip the lentil sausage on a stick into the pancake batter. Ensuring that all sides of the sausage have been coated. Then fry in canola oil.

Allow the vegan pancake sausages on a stick to drain on a paper towel after frying. Serve warm with maple syrup, if desired.

Ingredients

  • Skewers

  • Canola Oil

  • Lentil Sausage
  • 1 cup dried brown lentils

  • 3 cups broth

  • 1 cup finely chopped pecans

  • 1 cup ground flaxseed

  • 3 tablespoons maple syrup

  • 2 tablespoons tamari sauce

  • 2 teaspoons fennel seed

  • 2 teaspoons cumin

  • 1 teaspoon ground sage

  • 1 teaspoon thyme

  • ½ teaspoon cayenne pepper

  • ½ teaspoon black pepper

  • ½ teaspoon salt

  • Vegan Pancakes
  • 1 cup Flour

  • 1 Tbsp Sugar

  • 2 Tbsp Baking Powder

  • 1/4 tsp Salt

  • 1 cup Almond Milk

  • 1 Tbsp Apple Cider Vinegar

  • 2 Tbsp Coconut Oil

  • Maple Syrup for dipping

Preparation

  • Prepare Lentil Sausage
  • Start by rinsing and sorting the lentils. Then add to medium pot with broth and bring to a boil; cook on medium high for 15-20 minutes, until liquid is absorbed and lentils are cooked through.
  • Now transfer cooked lentils to a medium mixing bowl and add the remaining ingredients. Mix until combined well.
  • Preheat oven to 400°. Using your hands, divide mixture into 12 balls, then shape into oblong “sausages” shaping the patties around the skewers.. Then lay sausage skewer onto a parchment lined baking sheet. Repeat until lentil sausage mixture is gone.
  • Bake for 15 minutes, or until lightly browned.
  • As lentil sausages are cooking prepare the vegan pancake batter. Simply add all the dry ingredients to a bowl. Whisk. Then mix together the apple cider vinegar with the plant milk, making vegan buttermilk. Now whisk in the vegan buttermilk along with the coconut oil. Set aside.
