Tastes just like a Greek lamb gyro but vegan! Flavor packed and tender.

Ingredients

  • Seitan
  • 1 cup vital wheat gluten

  • 1/4 cup chickpea flour

  • 1 cup water

  • 6 cups Not Beef Broth

  • Gyro Sauce
  • 1 tsp oregano

  • 1 tsp thyme

  • 1 tsp cumin

  • 1 tsp all spice

  • 1 1/2 tsp salt

  • 1 tsp black pepper

  • 1 tbsp onion powder

  • 2 cloves garlic

  • 2 tbsp olive oil

  • 2 tbsp Tahini

  • 2 tbsp lemon juice

  • 2 tbsp soy sauce

  • 3/4 cup Not Beef Broth

  • Serving Suggestions
  • 1/4 cup vegan tzatziki sauce (see notes)

  • pita bread

  • tomato

  • cucumber

  • red onion

  • lettuce

  • fresh dill or parsley

Preparation

  • Prepare your seitan.
  • Mix all the ingredients for gyros sauce together and set aside. After seitan has cooled thinly slice into “gyro-like” pieces.
  • Add gyro slices to skillet with one more tablespoon of oil. Then add gyro sauce to pan and allow content to simmer for about 10 – 15 minutes, Flipping gyros over once. Let cool for 5 minutes.
  • While gyros simmer, warm pita bread.
  • Then being to build your gyro. Topping it with gyro “meat”. tomato, cucumber, red onion, lettuce and leafy greens.

  • Calorie count above does not include tzatziki
  • Vegan Tzatziki: 2 1/2 Tbsp Chosen Mayo, 1 tsp olive oil, 1 tsp minced garlic, 1 tsp lemon juice, 1 tsp apple cider vinegar, 2 tsp dried dill, 1/4 tsp black pepper, pinch salt, 1/4 cucumber
