Zesty vegan feta cheese to add to any dish

Ingredients

  • 1 block hard/firm tofu

  • 2 Tbsp warm water

  • 1 tsp white miso

  • 2 Tbsp olive oil

  • 1 Tbsp nutritional yeast

  • 2 Tbsp apple cider vinegar

  • 2 tsp lemon juice

  • 1 1/4 tsp salt

  • 1/2 tsp garlic powder

  • 1 tsp oregano

  • dash paprika

  • dash cayenne pepper (optional)

Preparation

  • Allow tofu to press in tofu presser for 10 minutes to remove excess liquid.
  • While tofu is pressing, make your feta marinade. Add remaining ingredients to a bowl and whisk.
  • Once tofu is done, cut tofu into cubes or crumble and mix together with feta marinade.
  • Allow the marinade to sit for at least one hour in the refrigerator. Store in airtight container for up to three days in the refrigerator.
