Vegan Breakfast Idea: Mini Shrimp & Grits Bites

Going vegan during the holidays may feel intimidating. But trust me there are some fun easy ways to try out your new vegan diet. For example, the best thing you can learn to do as a new vegan is to begin to veganize your favorites, like this vegan breakfast idea: mini shrimp and grit bites.

The “shrimp” in these bites are made from lion’s mane mushroom. A unique mushroom found in the fungi family which supports brain health. This mushroom is known for its densely spongy texture making it a great vegan meat alternative.

To make this recipe even more fun it’s all pulled together in a nice bite sized package. So let’s get started!

Gather Ingredients

This recipe is fairly easy to make. Here’s what you’ll need:

  • Lion’s mane mushroom
  • Grits
  • Parsley
  • Almond milk
  • Apple cider vinegar
  • Hot sauce
  • Kosher salt
  • Garlic powder
  • Black pepper
  • All-purpose flour
  • Paprika
  • Cayenne pepper

You’ll also need the following equipment to make this recipe:

Batter and air fry the vegan shrimp

To get started be sure to wash and thoroughly dry the lion’s mane mushroom. When handling and cooking with mushroom in general it’s important to note that it’s typically best not to wash mushrooms until ready to use. This way the mushrooms won’t begin to mold and decay prematurely.

After the lion’s mane mushroom has been cleaned being to prepare the marinade and batter. To get this done simply mix all the ingredients for the marinade together and set aside. Next whisk together the dry ingredients for the batter together and set aside.

Now gently rip the lion’s mane mushroom into bite sized pieces, about the size of your thumbnail. Then gently mix and toss in with the wet mixture. Next, remove mushroom pieces from the wet mixture with a slotted spoon into the dry mixture. Toss until all pieces have been evenly coated.

Lightly spray each mushroom piece with olive oil cooking spray and air fry in the air fryer on 350* for 11 min. Be sure to check halfway through and turn over the mushroom pieces so they may finish cooking on the other side.

Before air frying

Prepare the grits

To prepare the grits ensure you follow the steps on the packaging. For this recipe I used quick grits. Which required me to bring the water (or broth) to a boil and then slowly stir the grits in. Cooking over medium to low heat until grits begin to thicken. Next, spoon about one tablespoon of cooked grits into each cupcake cup. Then bake for about 15 – 20 minutes on 350* or until grits begin to turn golden brown and crisp around the edges.

Allow the grits to cool before removing from the cupcake tin. About 30 – 40 minutes. If the grits get cold it’s always possible to reheat in the air fryer.

Assemble the mini shrimp & grits bites

Finally, take each grits cupcake and top with the vegan shrimp. Do this until no ingredients remain. Garnish with chopped parsley and enjoy!
