Turmeric Lentil Lettuce Cups

Ingredients
2 tbsp 2 olive oil
2 cups 2 lentils, cooked
2 cloves garlic
1 tsp 1 turmeric
1/2 1/2 medium onion
1 Tbsp 1 garlic powder
1 tsp 1 vegan chicken-less seasoning salt
1 tsp 1 salt
1 tsp 1 pepper
3 3 scallions, roughly chopped
1/8 cup 1/8 mint, roughly chopped
6 lettuce cups
- For the Sauce
6 small 6 shallots, roughly chopped
1 stalk 1 lemongrass, pale part finely chopped
6 cloves 6 garlic, roughly chopped
2 pieces 2 ginger, roughly chopped (~2 Tbsp)
1 tbsp 1 hoisin
1 tbsp 1 Sriracha
3 tbsp 3 coconut aminos
1 tsp 1 sea salt
1 tsp 1 ground coriander seeds
1 tsp 1 turmeric
1 tsp 1 coconut sugar
1/8 cup 1/8 lime
1/8 cup 1/8 rice vinegar
Preparation
- Heat olive oil in a skillet until warmed over medium heat.
- Blend all sauce ingredients together in a food processor or whisk. Set aside.
- Saute cooked lentils with garlic until warmed through, about 5 minutes.
- Spoon warmed lentil mixture into lettuce cups. Pour sauce over lentil mixture and garnish with scallions and mint
