Turmeric Lentil Lettuce Cups

Ingredients
2 tbsp olive oil
2 cups lentils, cooked
2 cloves garlic
1 tsp turmeric
1/2 medium onion
1 Tbsp garlic powder
1 tsp vegan chicken-less seasoning salt
1 tsp salt
1 tsp pepper
3 scallions, roughly chopped
1/8 cup mint, roughly chopped
6 lettuce cups
- For the Sauce
6 small shallots, roughly chopped
1 stalk lemongrass, pale part finely chopped
6 cloves garlic, roughly chopped
2 pieces ginger, roughly chopped (~2 Tbsp)
1 tbsp hoisin
1 tbsp Sriracha
3 tbsp coconut aminos
1 tsp sea salt
1 tsp ground coriander seeds
1 tsp turmeric
1 tsp coconut sugar
1/8 cup lime
1/8 cup rice vinegar
Preparation
- Heat olive oil in a skillet until warmed over medium heat.
- Blend all sauce ingredients together in a food processor or whisk. Set aside.
- Saute cooked lentils with garlic until warmed through, about 5 minutes.
- Spoon warmed lentil mixture into lettuce cups. Pour sauce over lentil mixture and garnish with scallions and mint
