The perfect light and flavorful lunch (or meal)!

Ingredients

  • 2 tbsp olive oil

  • 2 cups lentils, cooked

  • 2 cloves garlic

  • 1 tsp turmeric

  • 1/2 medium onion

  • 1 Tbsp garlic powder

  • 1 tsp vegan chicken-less seasoning salt

  • 1 tsp salt

  • 1 tsp pepper

  • 3 scallions, roughly chopped

  • 1/8 cup mint, roughly chopped

  • 6 lettuce cups

  • For the Sauce
  • 6 small shallots, roughly chopped

  • 1 stalk lemongrass, pale part finely chopped

  • 6 cloves garlic, roughly chopped

  • 2 pieces ginger, roughly chopped (~2 Tbsp)

  • 1 tbsp hoisin

  • 1 tbsp Sriracha

  • 3 tbsp coconut aminos

  • 1 tsp sea salt

  • 1 tsp ground coriander seeds

  • 1 tsp turmeric

  • 1 tsp coconut sugar

  • 1/8 cup lime

  • 1/8 cup rice vinegar

Preparation

  • Heat olive oil in a skillet until warmed over medium heat.
  • Blend all sauce ingredients together in a food processor or whisk. Set aside.
  • Saute cooked lentils with garlic until warmed through, about 5 minutes.
  • Spoon warmed lentil mixture into lettuce cups. Pour sauce over lentil mixture and garnish with scallions and mint
