The Tastiest Vegan Breakfast Lentil Sausage

If you’re a new vegan one of the easiest things to do is to check out meat alternatives. These are a great gateway into trying plant based meats. Unfortunately, these aren’t always the healthiest options. Which is why making your own vegan meat alternatives can be a healthy and easy way to go. This vegan breakfast sausage recipe is a great example! Packed with lots of fiber, protein and spice it’ll be your go-to breakfast option in no time. Let’s cook!

Gather Ingredients

To get this recipe started you will need the following ingredients:

  • Cooked lentils
  • Chopped Walnuts
  • Crushed fennel seeds
  • Onion powder
  • Chili Pepper Flakes
  • Minced Garlic
  • Chickpea Flour
  • Vegetable Broth

Prepare the Sausage Patties

To prepare the sausage patties you’ll want to first pulse 1/2 cup of cooked lentils in a food processor. DO NOT over blend. Then in a medium mixing bowl, mix pulsed lentils in with other half cup of lentils and chopped walnuts. This will ensure the texture isn’t mushy.
Next add remaining ingredients minus broth and mix until mixture is well coated.
Adding about 1/8 cup at a time, mix in vegetable broth into mixture. Mix until vegan breakfast sausage is just moist enough and NOT SOUPY. You want to be able mold your vegan breakfast sausage mixture into “sausage like” patties.

Cook the Sausage Patties

Once you have molded the patties, add to a well oiled cast iron skillet. If you don’t have a cast iron skillet any skillet to use is fine. The cast iron skillet will help to add more flavor.
Cook on medium high heat for about 7 – 8 minutes on each side or until each side is golden brown and crispy. Allow to cool slightly on a paper towel and serve hot.
