Eat a lox bagel and save the fish by enjoying this vegan take on seafood classic.

Ingredients

  • Marinade
  • 1 cup apple cider vinegar⁣

  • 1/2 cup rice vinegar⁣

  • 1/4 cup soy sauce⁣

  • Lox**⁣
  • 1 – 2 carrots thinly sliced⁣

  • Bagel(s) of choice⁣

  • Toppings**⁣
  • Tofu spread (soft tofu mixed with chives, salt and pepper)⁣

  • Red onions, thinly sliced⁣

  • Capers⁣

  • Fresh Dill⁣

Preparation

  • Add all marinade ingredients together in a mason jar. Shake and set aside.⁣
  • Thinly slice carrots using vegetable peeler and allow to sit in marinade for at least 12 hours.⁣
  • Mix together all ingredients for tofu spread and set aside until ready to use.⁣
  • Toast bagel, add toppings and enjoy!
