A versatile and tasty dish that can be served whenever the mood for taco Tuesday hits!

Ingredients

  • 1 block tofu, crumbled

  • 1 Tbsp olive oil

  • 3 Tbsp taco seasoning

  • 1/4 cup water

  • 1/2 cup purple cabbage

  • 1 jalapeno, finely chopped

  • 1/4 cup purple onion, finely chopped

  • 1 cup corn, frozen or fresh

  • 1/2 cup mushrooms, sliced

  • 1/2 cup bell peppers, chopped

  • 1 Tbsp garlic powder

  • 1 Tbsp onion powder

  • 2 Tbsp nutritional yeast

Preparation

  • Heat oil in skillet.
  • Add onion, bell peppers and corn to skillet and allow to saute for about 3-5 mins.
  • Add tofu, remaining veggies and spices and cook for an additional 8 – 10 minutes. Allowing the food to heat through.
  • Serve by itself or on top of lettuce cups and garnish with cilantro.
