String Beans with Avocado Lemon Sauce

Ingredients
2 cups string beans, trimmed
- Avocado Lemon Sauce
1/2 avocado
1 lemon, juiced
salt + pepper to taste
Preparation
- Blend avocados, lemon, salt + pepper together. Set aside.
- Start by trimming your string beans and then rinse throughly.
- In a large sauce pan or stock pot bring 4 quarts of salted water to a boil.
- While water is boiling ad cold water and ice to a large bowl and set aside.
- Once boiling reduce heat slightly and add green beans to pan. Let boil for 3 – 5 minutes.
- Then immediately add green beans to cold water. This will stop the cooking. Drain the beans.
- Toss with 2 Tbsp olive oil and 1 Tbsp minced garlic.
- Top with avocado lemon sauce and enjoy!
