A light + fresh side perfect for Spring or Summer.

Ingredients

  • 2 cups string beans, trimmed

  • Avocado Lemon Sauce
  • 1/2 avocado

  • 1 lemon, juiced

  • salt + pepper to taste

Preparation

  • Blend avocados, lemon, salt + pepper together. Set aside.
  • Start by trimming your string beans and then rinse throughly.
  • In a large sauce pan or stock pot bring 4 quarts of salted water to a boil.
  • While water is boiling ad cold water and ice to a large bowl and set aside.
  • Once boiling reduce heat slightly and add green beans to pan. Let boil for 3 – 5 minutes.
  • Then immediately add green beans to cold water. This will stop the cooking. Drain the beans.
  • Toss with 2 Tbsp olive oil and 1 Tbsp minced garlic.
  • Top with avocado lemon sauce and enjoy!
