Sticky Orange Glazed Tempeh

Ingredients
1 cup tempeh, cooked and chopped
2 cups wild rice
1 orange bell pepper, chopped
1 Tbsp ginger, minced
2cloves garlic, minced
2 Tbsp peanut oil
- Orange Glaze Sauce
1 1/2 cups water
2 Tbsp orange juice, freshly squeezed
1/4 cup lemon juice
1/3 cup rice vinegar
2 1/2 Tbsp soy sauce
1 Tbsp orange zest, grated
1/2 cup coconut sugar
1/2 tsp ginger root, minced
1/2 tsp garlic, minced
1/4 tsp red pepper flakes
3 Tbsp cornstarch
Preparation
- Whisk together all orange glaze ingredients and set aside.
- Heat oil over medium heat.
- Add tempeh and bell peppers to the saute pan. Saute for five minutes.
- Then add ginger and garlic and saute until fragrant, about 1 – 2 minutes.
- Lower heat and pour prepared orange glaze sauce over tempeh and peppers. Allow to heat through for 1 – 2 minutes. Careful not to burn.
- Spoon tempeh over cooked rice and enjoy!
