kcalThis zesty and delicious pasta dish uses aromatic lemons for a light yet creamy sauce.
Ingredients
1 package 1 spaghetti
1 Tbsp 1 olive oil
1 clove 1 garlic
1 cup 1 coconut milk
juice of 1 lemon
1 tsp 1 salt
1 tsp 1 black pepper
chopped basil for garnishing
Preparation
- Prepare spaghetti according to package directions. Reserve 3/4 cup pasta water for cream sauce. Set aside.
- Heat olive over medium heat. Add garlic and saute until fragrant. Then add coconut milk, lemon juice, pasta water (to desired creaminess), salt and pepper and allow to simmer for 5 – 7 minutes.
- Add noodles to sauce. Toss and serve.
