A healthy vegan twist on a Southern staple.

Ingredients

  • Dry Ingredients
  • 1 1/2 cup cornmeal

  • 1 1/2 cup whole wheat flour

  • 1 Tbsp baking powder

  • 1 Tbsp coconut sugar

  • 1 tsp salt

  • Wet Ingredients
  • 1 cup sweet corn

  • 1 cup almond milk

  • 1/3 cup coconut oil

  • 1 Tbsp butter extract

  • oil for greasing pan

Preparation

  • Preheat your oven to 400° F.
  • Whisk together the dry ingredients to a mixing bowl.
  • Add the wet ingredients to the mixing bowl and stir with a whisk until just combined.
  • Pour the batter into the bottom of your baking dish or an oiled 10 or 12” iron skillet.
  • Bake at 400° F for about 30 minutes. The top will turn golden and start to crack a little when it’s done. (Turn to broil for the last 2-3 minutes to brown the top if desired).
  • Let it cool for about 10 minutes before slicing.
