Ingredients
- Dry Ingredients
1 1/2 cup 1 1/2 cornmeal
1 1/2 cup 1 1/2 whole wheat flour
1 Tbsp 1 baking powder
1 Tbsp 1 coconut sugar
1 tsp 1 salt
- Wet Ingredients
1 cup 1 sweet corn
1 cup 1 almond milk
1/3 cup 1/3 coconut oil
1 Tbsp 1 butter extract
oil for greasing pan
Preparation
- Preheat your oven to 400° F.
- Whisk together the dry ingredients to a mixing bowl.
- Add the wet ingredients to the mixing bowl and stir with a whisk until just combined.
- Pour the batter into the bottom of your baking dish or an oiled 10 or 12” iron skillet.
- Bake at 400° F for about 30 minutes. The top will turn golden and start to crack a little when it’s done. (Turn to broil for the last 2-3 minutes to brown the top if desired).
- Let it cool for about 10 minutes before slicing.
