A great and easy soul food fusion recipe that’s perfect for lunch. The sweet potatoes are enriched with B vitamins which help to boost mood so it’s perfect for when you’re low in energy right before your period begins.

Ingredients

  • 1 burrito size tortilla

  • 1/4 cup boiled sweet potatoes

  • 1/2 cup collard greens, steamed + chopped

  • 1/4 cup black-eyed peas. cooked + lightly smashed

  • 1/4 cup bell pepper, chopped

Preparation

  • Warm tortilla
  • From the middle of the tortilla to straight down slice the tortilla (check out the tutorial video here)
  • Place each ingredient within a quadrant of the tortilla (see picture below)
  • Now fold the first quadrant over the second and so on until you have one tortilla triangle (see video below)
  • Gently press and brown the tortilla on both sides.
  • Enjoy!

Notes

  • If you have the patience I would recommend champagne braised collard greens. Here’s how to make them: (1) add washed, chopped collard greens to a large, heavy-bottom pan; (2) add 1/2 cup of vegetable broth and 2 Tbsp champagne vinegar and let that simmer for 45 mins; (3) be sure to check on the greens and stir occasionally. The flavor is unmatched.
