Polenta Pizzas w/ Green Goddess Sauce

Light, refreshing and easy 30 minute dinner idea.


  • 18 oz tube of polenta

  • Roasted Veggies Toppings
  • 2 cups broccoli, chopped

  • 2 cups frozen artichokes

  • 2 cups Brussel sprouts

  • Polenta Seasoning Mix
  • 1/2 tsp dried basil

  • 1/2 tsp oregano

  • 1/2 tsp salt

  • 1/2 tsp garlic powder

  • Green Goddess Dressing
  • 1/4 cup coconut milk

  • 1 cup spinach

  • 2 tbsp dill

  • 1/2 tsp minced garlic

  • 2 tbsp lime juice

  • 1/2 tsp salt

  • Additional Toppings
  • 1/4 cup hemp seeds

  • 1/4 cup microgreens


  • Slice polenta into rounds
  • Mix together polenta seasoning mix and divide.
  • Spread veggies out on a sheet pan. Season with 1/2 of polenta seasoning mix. Roast in oven on 350*F for 20 minutes. Set aside and let cool.
  • Season polenta with 1/2 polenta seasoning mix. Then cook polenta rounds in air fryer on 400*F for 8 – 10 minutes or until golden brown.
  • Add all of the green goddess dressing ingredients to blender and blend until smooth. Set aside.
  • Add roasted veggies to food processor (it’s okay if green goddess sauce is still in there that will make them even more flavorful) and pulse for 5 to 10 seconds. You just want to veggies to be lightly chopped.
  • Now it’s time to build the pizzas! Top the polenta rounds with a teaspoon or so of green goddess sauce, roasted veggies, more goddess sauce, hemp seeds and microgreens.
  • Enjoy warm!


  • This recipe may also be enjoyed raw if desired.
