Polenta Pizzas w/ Green Goddess Sauce

Ingredients
18 oz 18 tube of polenta
- Roasted Veggies Toppings
2 cups 2 broccoli, chopped
2 cups 2 frozen artichokes
2 cups 2 Brussel sprouts
- Polenta Seasoning Mix
1/2 tsp 1/2 dried basil
1/2 tsp 1/2 oregano
1/2 tsp 1/2 salt
1/2 tsp 1/2 garlic powder
- Green Goddess Dressing
1/4 cup 1/4 coconut milk
1 cup 1 spinach
2 tbsp 2 dill
1/2 tsp 1/2 minced garlic
2 tbsp 2 lime juice
1/2 tsp 1/2 salt
- Additional Toppings
1/4 cup 1/4 hemp seeds
1/4 cup 1/4 microgreens
Preparation
- Slice polenta into rounds
- Mix together polenta seasoning mix and divide.
- Spread veggies out on a sheet pan. Season with 1/2 of polenta seasoning mix. Roast in oven on 350*F for 20 minutes. Set aside and let cool.
- Season polenta with 1/2 polenta seasoning mix. Then cook polenta rounds in air fryer on 400*F for 8 – 10 minutes or until golden brown.
- Add all of the green goddess dressing ingredients to blender and blend until smooth. Set aside.
- Add roasted veggies to food processor (it’s okay if green goddess sauce is still in there that will make them even more flavorful) and pulse for 5 to 10 seconds. You just want to veggies to be lightly chopped.
- Now it’s time to build the pizzas! Top the polenta rounds with a teaspoon or so of green goddess sauce, roasted veggies, more goddess sauce, hemp seeds and microgreens.
- Enjoy warm!

- This recipe may also be enjoyed raw if desired.
