A veganized and healthified version of a classic Chinese dish – enjoy!

Ingredients

  • 2 Tbsp sesame seed oil

  • 1/2 block firm tofu, chopped

  • 1 Tbsp black salt

  • 1/4 cup light soy sauce

  • 2 Tbsp curry powder

  • 2 cups quinoa, cooked

  • 1/2 onion, chopped

  • 1 cup carrots, chopped

  • 1 cup peas, frozen

  • 1 cup pineapple, fresh or canned

Preparation

  • Whisk together soy sauce and curry powder and set aside.
  • Add sesame seed oil to skillet heated on medium heat. Add tofu and black salt and heat through.
  • Add onions, carrots and peas to skillet and saute for about 5 minutes. Then add quinoa and allow to cook for an additional 3 – 5 minutes. Add soy sauce mixture and stir.
  • Then add pineapple and cook until pineapple is just heated through, about 5 minutes.
  • Garnish with cilantro and then serve warm.
