Peanut Butter Brownie Baked Oatmeal

kcalThis is a perfect make ahead breakfast meal. Packed with flavor and simple to make.
Ingredients
1 Tbsp 1 flax meal
2 cups 2 rolled oats
4 Tbsp 4 flour
3 Tbsp 3 unsweetened cocoa powder
1 tsp 1 baking powder
pinch of salt
2 cups 2 unsweetened almond milk
2 Tbsp 2 date paste, to taste (See notes)
2 tsp 2 coconut oil, melted
2 tsp 2 vanilla flavor
1/4 cup 1/4 cacao sweet nibs
2 Tbsp 2 peanut butter for topping
Preparation
- Preheat oven to 375F.
- In a small bowl, combine the flax meal and 3 Tbsp water. Let sit for 15 minutes while you gather the other ingredients.
- Add the remaining ingredients (except peanut butter) to a medium sized baking dish. Stir to combine, and taste to make sure the mixture is sweet enough. Sweeten to taste.
- Bake for 30 to 35 minutes, or until the top is no longer shiny.
- Drizzle with peanut butter and enjoy immediately.

Notes
- For reheating you may want to add 1/4 – 1/2 cup plant milk to keep from drying out. I’ve found reheating on the stove to be the best option but the microwave can also work.
- To make sure the date paste mixes evenly I would suggest blending with the almond milk first and then mixing in with the remaining ingredients.

Prepared this morning and enjoying it now … I did substitute some items that I thought I had in the pantry i.e. coconut oil, however I don’t think it took away from the overall taste.
Oh that’s great. I wonder what you subbed the coconut oil for?
grapeseed, only because I didn’t have my phone (printed the recipe) and couldn’t refer back to the tiktok to see if you mentioned the reason for coconut oil. I also added a dash of cinnamon LOL. So ooey gooey good
