Peanut Butter Banana Baked Oatmeal

Ingredients
2 cups 2 rolled oats
1 tsp 1 cinnamon
1 tsp 1 nutmeg
1 tsp 1 baking powder
1/4 tsp 1/4 salt
2 2 ripe bananas
1 1/2 cups 1 1/2 almond milk
1/4 cup 1/4 creamy peanut butter
2 Tbsp 2 maple syrup
1 Tbsp 1 ground flaxseed
1 tsp 1 vanilla extract
Preparation
- Preheat the oven to 375° F. Prepare muffin tin by greasing with a small amount of coconut oil.
- In a large bowl, combine the oats, cinnamon, baking powder and salt.
- In a smaller mixing bowl, mash the bananas, add the almond milk, peanut butter, maple syrup, flaxseed and vanilla extract. Allow the mixture to stand for 5 minutes for the flaxseed to set.
- Pour over the wet ingredients over the oat mixture and stir to combine.
- Bake uncovered in the preheated oven until the top of the oatmeal is golden and the mixture is set, about 30-35 minutes. Remove and allow it to cool for 5 minutes.
- Top with drizzled peanut butter and banana slices, if desired.
