A flavorful Olive Garden copycat for Zuppa Tuscana soup.

Ingredients

  • 2 cups spicy Italian ground “sausage”

  • 4 Tbsp nutritional yeast

  • 1/2 onion, diced

  • 1 Tbsp minced garlic

  • 6 cups “chicken” broth (using not chicken bouillon cubes)

  • 2 cups water

  • 4/5 yellow potatoes, cut into 1-inch pieces

  • 3 tsp salt or to taste

  • 1 tsp black pepper

  • 2 cups coconut milk

  • 4 cups chopped kale

Preparation

  • In a large pot saute “sausage” for 5-6 minutes until browned. Use a slotted spoon to transfer tofu to a plate and set it aside.
  • In the same pot, add olive oil and saute onions over medium heat until translucent. Add garlic and nutritional yeast then saute for another minute until fragrant.
  • Add broth, water, potatoes, salt, and pepper, and bring to a boil. Boil until potatoes are tender. Stir in kale, and coconut milk. Add tofu sausage. Taste and add salt and pepper if needed. Serve garnished with chopped parsley.
