kcalA fiber rich breakfast cookie topped with cinnamon apples. Both light and refreshing!
Ingredients
1 1/2 cup 1 1/2 Oat flour
1 1/4 cup 1 1/4 Rolled oats
1/3 cup 1/3 Date paste
1/3 cup 1/3 Coconut oil, melted
1/4 cup 1/4 golden raisins
1/4 cup 1/4 dried cranberries
1/4 teaspoon 1/4 Salt
1/2 teaspoon 1/2 Vanilla
- Apple Filling
1 1 honeycrisp apple, chopped
1 1 lemon, juiced
1 Tbsp 1 cinnamon
1 tsp 1 nutmeg
Preparation
- Preheat oven to 350°F (180°C).
- In a large mixing bowl, combine all the crust ingredients: oat flour, rolled oats, date paste, raisins, melted coconut oil, salt and vanilla.
- Squeeze the batter with your hands to bring all the ingredients together to create a dough. If too dry (may happen if you are using a coarse oat flour), add 1-2 tablespoons of water, add 1 at a time, until the dough is soft and begins to stick together.
- Working in batches press dough into each individual muffin tin. Making sure there are no holes/gaps.
- Bake in the oven for 20 – 25 minutes or until golden brown.
- Apple Filling
- Meanwhile, toss the chopped apples with lemon juice, cinnamon and nutmeg.
- Spoon apple filling into each oatmeal cup.
