BBQ mushroom carnitas for tacos, nachos and more!

Ingredients

  • 2 portabello mushroom caps

  • 1 (14oz) can fire roasted tomatoes

  • 1/4 cup apple cider vinegar

  • 2 Tbsp brown sugar

  • 1/4 cup onion powder

  • 1 Tbsp minced garlic

  • 1 Tbsp hoisin sauce

  • 1 Tbsp black pepper

  • 1 Tbsp paprika

  • 1 tsp tabasco

  • 1 tsp chili powder

  • 1 tsp ground mustard

  • 1 tsp liquid smoke

  • 1 tsp slap ya mama seasoning

Preparation

  • Heat saute pan over medium heat.
  • Shred mushrooms with two forks (see video here) then add to saute pan and begin to cook mushrooms over medium-low heat.
  • Blend remaining ingredients in food processor and add sauce to mushrooms, reserving 1/2 cup of sauce to drizzle over nachos if preparing BBQ nachos recipe.
  • Add mushroom carnitas to tacos, nachos, burrito bowls and more!
