Spice up your Springtime meals with a tangy and sweet strawberry spring salad tossed in balsamic vinaigrette.

Ingredients

  • 1 bag spring salad mix

  • 1 cup strawberries, chopped

  • 1/2 cup hemp seeds

  • 1 cucumber, sliced

  • 1/2 cup mandarin oranges

  • 1/8 cup chia seeds

  • 1 cup chickpeas, cooked

  • 2 Tbsp oregano, dried

  • Balsamic Dressing
  • 1/2 cup olive oil

  • 1/4 cup balsamic vinegar

  • 1 tsp coconut sugar

  • 1 tsp dijon mustard

  • 1 clove garlic, minced

  • salt and pepper to taste

Preparation

  • Whisk all the ingredients for the balsamic dressing together until well blended.
  • Add all salad ingredients to a large bowl then pour salad dressing on top and toss until salad has been coasted. Serve immediately.

Notes

  • If you would like leftovers skip adding the dressing on top because salad leaves will easily wilt with dressing on top sitting in the fridge/
