Easy and light taco salad.

Ingredients

  • 1/2 cup lentils, cooked

  • 1 tsp taco seasoning

  • 2 cups kale, chopped

  • 1/2 cup pico de gallo

  • 1/4 cup pickled red cabbage

  • 1 cup cooked sweet potatoes

  • 1/2 avocado, sliced

  • 1 lime

  • Lime Cilantro Vinaigrette
  • 1 lime, juiced

  • 1/4 cup cilantro, chopped

  • 2 Tbsp olive oil

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 tsp brown sugar

  • salt + pepper to taste

Preparation

  • Whisk together all lime-cilantro vinaigrette ingredients. Set aside.
  • Mix cooked lentils with taco seasoning.
  • Build salad in bowl.
  • Top with avocado slices, lime-cilantro dressing and enjoy! ⁣
