Easy and light taco salad.

Ingredients

  • 1/2 cup 1/2 lentils, cooked

  • 1 tsp 1 taco seasoning

  • 2 cups 2 kale, chopped

  • 1/2 cup 1/2 pico de gallo

  • 1/4 cup 1/4 pickled red cabbage

  • 1 cup 1 cooked sweet potatoes

  • 1/2 1/2 avocado, sliced

  • 1 1 lime

  • Lime Cilantro Vinaigrette
  • 1 1 lime, juiced

  • 1/4 cup 1/4 cilantro, chopped

  • 2 Tbsp 2 olive oil

  • 1/2 tsp 1/2 onion powder

  • 1/2 tsp 1/2 garlic powder

  • 1 tsp 1 brown sugar

  • salt + pepper to taste

Preparation

  • Whisk together all lime-cilantro vinaigrette ingredients. Set aside.
  • Mix cooked lentils with taco seasoning.
  • Build salad in bowl.
  • Top with avocado slices, lime-cilantro dressing and enjoy! ⁣
