Ingredients Needed For The Pink Goddess Chickpea Brunch Bowl

  • Sweet Potatoes
  • Beets
  • Quinoa
  • Green Beans
  • Garbanzo Beans
  • Pink Goddess Sauce: Tahini, Beet Root Powder, Lemon Juice, EVOO, Garlic, Black Pepper, Date Syrup

How To Prepare The Fresh Vegetables

The most important part of this bowl is not the sauce. Although, sometimes I’d like to believe it is, but in fact, the vegetables are the most important part of this bowl. Which is why you want to be sure to take great care when cleaning your vegetables properly. Especially root vegetables like sweet potatoes and beets, both used in this recipe.

Fresh produce can contain harmful bacteria which may cause nausea , diarrhea or other harmful digestive issues. So make sure you’re washing all your produce thoroughly either by hand with a scrubbing brush or using the wireless food purifier.

One your produce has been thoroughly washed chop and dice your vegetables to your desired size. I prefer my vegetables chopped bite size so they easily fit on my fork and it doesn’t feel like I’m trying to force myself to eat large chunks of veggies.

How To Cook Your HealthiHER Pink Goddess Chickpea Brunch Bowl

Once your vegetables have been chopped it’s time to start cooking. You will have two choices here: to steam or boil your root vegetables. Steaming is actually healthier than boiling because less nutrients are leached out into the water. That said both are healthier alternatives than deep frying.

You will want to boil and / or steam the following:

  • Sweet potatoes
  • Beets
  • Green Beans

While those are steaming you will want to cook your quinoa according to the package directions. Then lightly sauté your garbanzo beans. Since there will be lots of flavor in the Pink Goddess Sauce simply sauté the garbanzo beans in broth or olive oil, salt and pepper – maybe even a little bit of cayenne pepper if you’d like a kick! The great thing about this dish is the ingredients will likely be finished cooking around the same time. It should take no more than 20 – 25 minutes to prepare.

As the veggies and plant protein are cooking, quickly prepare the Pink Goddess Sauce. You’ll want to add: Tahini, Beet Root Powder, Lemon Juice, EVOO, Garlic, Black Pepper, Date Syrup to your food processor and blend until smooth.

Once the Pink Goddess Sauce is prepared and the vegetables, plant protein and quinoa is done cooking build your bowl. Here’s how: add the quinoa along with the root vegetables to the bowl.
