Easy, tasty Tex Mex classic with a twist. Skip the pots and pan and keep it all in one skillet with this Easy Enchilada Skillet dinner.

Ingredients

  • 1 Tbsp 1 olive oil

  • 2 cups 2 black beans, cooked

  • 1 cup 1 corn, frozen or fresh

  • 1/2 cup 1/2 carrots, chopped

  • 1 onion, diced

  • 1 package 1 taco seasoning

  • 1 can 1 enchilada sauce

  • 2 cloves garlic, minced

  • salt and pepper to taste

  • 2 Tbsp 2 pickled jalapeños, sliced

  • 2 cups 2 tortilla chips

Preparation

  • Heat olive oil in cast iron skillet. Then add diced onions, carrots and corn to skillet on medium heat and allow to saute for 4 – 5 minutes.
  • Now add black beans, jalapeños, enchilada sauce, taco seasoning and garlic and allow to simmer on medium heat for ten minutes.
  • Gently break the chips and mix in. Serve hot.
