kcalEasy, tasty Tex Mex classic with a twist. Skip the pots and pan and keep it all in one skillet with this Easy Enchilada Skillet dinner.
Ingredients
1 Tbsp 1 olive oil
2 cups 2 black beans, cooked
1 cup 1 corn, frozen or fresh
1/2 cup 1/2 carrots, chopped
1 onion, diced
1 package 1 taco seasoning
1 can 1 enchilada sauce
2 cloves garlic, minced
salt and pepper to taste
2 Tbsp 2 pickled jalapeños, sliced
2 cups 2 tortilla chips
Preparation
- Heat olive oil in cast iron skillet. Then add diced onions, carrots and corn to skillet on medium heat and allow to saute for 4 – 5 minutes.
- Now add black beans, jalapeños, enchilada sauce, taco seasoning and garlic and allow to simmer on medium heat for ten minutes.
- Gently break the chips and mix in. Serve hot.
