This recipe is not only easy but super flavorful. A great make ahead breakfast item to last you a few days throughout a busy week. Here’s what you’ll need to get this started:
- Just Egg
- Vegan Ricotta
- Salt
- Black Pepper
- Vegan Provolone or Melty Vegan Mozzarella
- Shredded Zucchini
- Chopped Plum Tomatoes
- Torn Fresh Basil
- Sweet Potato Tator Tots, divided
Prepare the Tator Tot Casserole
To get started with this recipe you’ll want to first make your ricotta-egg base. Do this my mixing your vegan ricotta, Tabasco sauce, provolone or mozzarella cheese, salt and pepper into a medium mixing bowl. Whisk until combined.

Then preheat your oven to 375*. Prepare your casserole dish by lightly spraying with non-stick spray or oil. Add your ricotta-egg mixture, along with the shredded zucchini, chopped tomatoes and torn basil into your prepared casserole dish.
Once oven has preheated bake for 25 minutes. Then top with frozen sweet potato tator tots and allow casserole to continue baking for 20 – 25 minutes or until center is solid. To test this stick a toothpick in the center and when it comes out clean casserole is ready. Serve warm.
