Tangy buffalo chickpeas wrapped in light and refreshing lettuce makes this the perfect lunch option.

Ingredients

  • 2 cups chickpeas (or 1 15 oz can)

  • 1 Tbsp onion powder

  • 1 Tbsp garlic powder

  • 1 Tbsp maple syrup

  • 1 1/2 cup frank’s hot sauce

  • 6 – 10 lettuce cups

  • Optional toppings: cucumbers, chives, vegan ranch

Preparation

  • Warm a large skillet over high heat.
  • When skillet is warm, add broth, garlic powder, onion powder and chickpeas. Cook for 2-3 minutes, until the chickpeas start to brown a bit. Stir well to coat chickpeas in the reduced broth.
  • When chickpeas are looking a bit browned you can add in the maple syrup. Stir to combine. Turn heat to medium.
  • Pour all the hot sauce over top. Toss chickpeas gently so that they are all coated in sauce. Turn off the heat and allow them to rest for 2 – 3 minutes before serving.
  • Add to lettuce cups, top with desired toppings and enjoy.

Notes

  • Calories above do not include ranch
