Easy Buffalo Chickpea Lettuce Cups

kcalTangy buffalo chickpeas wrapped in light and refreshing lettuce makes this the perfect lunch option.
Ingredients
2 cups 2 chickpeas (or 1 15 oz can)
1 Tbsp 1 onion powder
1 Tbsp 1 garlic powder
1 Tbsp 1 maple syrup
1 1/2 cup 1 1/2 frank’s hot sauce
6 – 10 6 – 10 lettuce cups
Optional toppings: cucumbers, chives, vegan ranch
Preparation
- Warm a large skillet over high heat.
- When skillet is warm, add broth, garlic powder, onion powder and chickpeas. Cook for 2-3 minutes, until the chickpeas start to brown a bit. Stir well to coat chickpeas in the reduced broth.
- When chickpeas are looking a bit browned you can add in the maple syrup. Stir to combine. Turn heat to medium.
- Pour all the hot sauce over top. Toss chickpeas gently so that they are all coated in sauce. Turn off the heat and allow them to rest for 2 – 3 minutes before serving.
- Add to lettuce cups, top with desired toppings and enjoy.
