Light and crispy breakfast pizza for those mornings on the go! Just top, bake and enjoy!

Ingredients

  • Pizza dough

  • 1 cup Spinach, chopped

  • 1/2 cup Artichokes, quartered

  • 1/2 cup bell peppers, chopped

  • 1/2 cup Tomatoes, quartered

  • Chickpea Spread
  • 1/4 cup Chickpeas, cooked

  • 2 Tbsp Dill, dried

  • 1 Tbsp Olive oil

  • 2 Tbsp Tahini

  • 1/8 cup vinegar of choice or lemon juice (I used champagne vinegar)

  • pinch of salt

Preparation

  • Preheat oven to 375* F.
  • Prepare pizza dough, if making from scratch or simply get your pizza dough if store bought.
  • Mash chickpeas with dill and olive oil until a creamy chickpea-dill spread is created. This will be the “sauce” base of our pizza. Add more oil, as needed, if chickpeas seem too dry.
  • Spread your chickpea sauce on top of your pizza dough crust.
  • Now take your spinach, artichokes, tomatoes, and bell peppers and begin to spread on top of your chickpea sauce. Carefully covering the entire pizza with all the chopped ingredients.
  • Bake in oven for 10 – 12 minutes. Allow to cool for 5 minutes and serve.
