Ingredients
1 cup Spinach, chopped
1/2 cup Artichokes, quartered
1/2 cup bell peppers, chopped
1/2 cup Tomatoes, quartered
- Chickpea Spread
1/4 cup Chickpeas, cooked
2 Tbsp Dill, dried
1 Tbsp Olive oil
2 Tbsp Tahini
1/8 cup vinegar of choice or lemon juice (I used champagne vinegar)
pinch of salt
Preparation
- Preheat oven to 375* F.
- Prepare pizza dough, if making from scratch or simply get your pizza dough if store bought.
- Mash chickpeas with dill and olive oil until a creamy chickpea-dill spread is created. This will be the “sauce” base of our pizza. Add more oil, as needed, if chickpeas seem too dry.
- Spread your chickpea sauce on top of your pizza dough crust.
- Now take your spinach, artichokes, tomatoes, and bell peppers and begin to spread on top of your chickpea sauce. Carefully covering the entire pizza with all the chopped ingredients.
- Bake in oven for 10 – 12 minutes. Allow to cool for 5 minutes and serve.
