A deliciously spicy twist on a breakfast classic, vegan banana bread.

Ingredients

  • 1 1/2 cups 1 1/2 flour

  • 1 1/2 tsp 1 1/2 baking powder

  • 1/2 tsp 1/2 baking soda

  • 1/8 cup 1/8 cinnamon

  • pinch salt

  • 4ripe bananas

  • 2 Tbsp 2 coconut oil, melted

  • 1 Tbsp 1 unsweetened applesauce

  • 1 tsp 1 vanilla

  • 3/4 cup 3/4 brown sugar

  • 1/4 cup 1/4 walnuts, chopped

  • Optional Cinnamon Streusel Topping: 1/4 cups walnuts, 2 Tbsp cinnamon, 2 Tbsp brown sugar, 2 Tbsp flour, 1 Tbsp coconut oil

Preparation

  • Preheat oven to 375* F.
  • Grease baking pan with coconut oil.
  • Mash bananas in a large bowl. Mash until no large chunks are remaining.
  • Add coconut oil, apple sauce, vanilla and brown sugar to the mashed bananas. Combine.
  • In a separate bowl, sift flour, baking soda, baking powder and cinnamon. Then add in the salt. Stir all ingredients until just combined.
  • Now gently fold in your chopped walnuts. Pour your mixture into the greased pan. Gently tapping the bottom of the pan once finished pouring to ensure its evenly leveled.
  • Mix the cinnamon streusel topping together and crumble on top of banana loaf.
  • Bake in oven for 25 – 35 minutes. When finished toothpick should come out clean.
  • Remove from the oven, allowing the banana bread to cool for 15 minutes in the pan and then on your cooling rack until complete cooled.

Notes

  • You want it to be a just a little bit undercooked when coming out of the oven because it will continue cooking in the pan for 10 – 15 mins.

    This is incredibly yummy!!! I used coconut sugar instead of brown in my bread and a little brown for my crumble and this, I gotta say, is one of the best banana bread recipes I ever made.
