An easy how to make a BLT salad for the perfect light vegan lunch.

Ingredients

  • Mushroom Bacon

  • Shredded Lettuce

  • Chopped Tomatoes

  • Vegan Feta

  • Lemon-Dijon Vinaigrette
  • Juice of one lemon

  • 2 Tbsp 2 Dijon Mustard

  • 3 Tbsp 3 Olive Oil

  • 1 Tbsp 1 Monk fruit Sweetener

  • 1 tsp 1 salt

  • 1 tsp 1 pepper

Preparation

  • Whisk all ingredients for the lemon dijon vinaigrette together and set aside.
  • Place remaining ingredients in a bowl and toss with lemon dijon vinaigrette or desired dressing and enjoy!
