Fluffy baked donuts

Ingredients

  • 3/4 c. all-purpose flour

  • 1/4 c oat flour

  • 1 tsp. baking powder

  • 1 tsp. ground cinnamon

  • 1/2 tsp. baking soda

  • 1/2 tsp. kosher salt

  • 2/3 c. unsweetened almond milk

  • 1/2 c. granulated sugar

  • 1/4 c. melted vegan butter

  • 1 tsp. apple cider vinegar

  • 1 tsp. pure vanilla extract

  • Cinnamon Sugar Coating
  • 1 c. granulated sugar

  • 4 tsp. ground cinnamon

  • Pinch kosher salt

Preparation

  • Preheat oven to 350°. In a large bowl, whisk together all the dry ingredients: flour, baking powder, cinnamon, baking soda, and salt.
  • In a medium bowl, whisk together the wet ingredients plus the sugar: almond milk, sugar, butter, apple cider vinegar, and vanilla. Pour into dry ingredients and mix until just combined. Spoon mixture into donut pan.
  • Bake until edges are golden and middles are set, 10 minutes. Remove donuts from pan and let cool slightly on a cooling rack.
  • In a medium bowl combine sugar, cinnamon, and a pinch of kosher salt. Gently sprinkle on top of donuts while still warm.
