The first ingredient you’ll work with for this almond ricotta recipe is slivered almonds. Take the slivered almonds out and allow them to soak, covering them with boiling hot water for at least 30 minutes. Preferably longer, around 2 -3 hours.

Once almonds have had time to soak you’ll continue to gather remaining ingredients to make the almond ricotta. Here are the remaining ingredients you will need for this vegan ricotta recipe:

- Salt
- Coconut Milk

Blend the Vegan Cheese Mixture
Now it’s time to add all the ingredients to your food processor. Pulse the ingredients together in the food processor until the almond ricotta is blended and chunky but not smooth. In order to get a texture similar to true ricotta do not blend the mixture until smooth.
